I've been trying to incorporate more fish in to our weekly rotation of meals. There are so many great health benefits from fish. It's a great thing to eat if you're trying to live healthier or lose weight. Our favorite types of fish are mahi, salmon, tuna and good ole' fresh water crappie. While meal planning this week I found a lost bag of frozen mahi filets in the back of the freezer. I love mahi, it's a very light, mild fish. I'm not a fan of fish that is "fishy" if you know what I mean. Using those once forgotten mahi filets I made the most delectable Blackened Mahi Mahi with Lemon Caper Butter Sauce. This recipe has me wanting to eat fish every night! Mild and flaky mahi paired with salty capers and fresh lemon juice creates the most delicious one pan dinner. Easy, full of flavor and ready in under 20 minutes.

How to serve Blackened Mahi with Lemon Caper Butter Sauce -
This dish is great served over orzo, parmesan couscous or garlic mashed potatoes. For a low carb option try it over a bed of greens such as sautéed spinach, zoodles or cauliflower rice.

Blackened Mahi Mahi with Lemon Caper Butter Sauce
Serves 2
Ingredients:
2 Mahi Mahi filets approx 8 oz each
1-2 Tbsp blackening seasoning
2 Tbsp oil
2 Tbsp butter
Juice of half a lemon
1 clove garlic, minced
1 Tbsp capers, drained
Directions:
Pat Mahi filets dry. Season liberally on both sides with blackening seasoning. Set aside.
Heat a large pan over medium to high heat. When the pan is hot add oil. Place Mahi fillets in hot pan and let cook 2-3 minutes. Flip and continue to cook.
As soon as you flip the mahi add butter, lemon juice, garlic and capers to pan. Continue to cook until mahi is cooked through and flakes easily with a fork.
Serve Mahi with sauce spooned over the top.
