Boursin Caramelized Onion Mushrooms

One day while at the farmers market stand I got to talking to the owner. She was talking about different ways to cook fresh vegetables and that she made a creamy mushroom dish last night. It sounded so good and got me thinking of different ways to recreate it. I wanted to bake them instead of on the stove like most creamy mushroom recipes. Then it hit me, what makes everything yummy? Cheese! I remembered the amazing steak at one of our favorite restaurants. It is Boursin Cheese on top of a steak, we call it the "Boujee Filet" and it is sooooo good. I decided to combine this delectable cheese with mushrooms to create a creamy and cheesy dish full of flavor.


Boursin Caramelized Onion Mushrooms

This Boursin Caramelized Onion Mushroom side dish is extremely easy with very little hands on time. Simply combine mushrooms, sliced onion and some seasonings in a pan, place Boursin cheese in middle and bake. Something magical happens when you bake this cheese, it becomes extra creamy and enhances the flavors. When baking time is up, stir to combine. There are many flavors of Boursin cheese, the Caramelized Onion is my favorite but the Garlic and Herb is also delicious.

Boursin Caramelized Onion Mushrooms

 

Serves 4


Ingredients:

  • 16 oz white or baby bella mushrooms, quartered

  • 1/2 sweet onion, thinly sliced

  • 1 5 oz wheel Boursin Caramelized Onion & Herbs Cheese

  • 1 Tbsp olive oil

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp red pepper flakes (optional)


Directions:

  • Preheat oven to 375 degrees F.

  • In a 9x10 baking dish combine mushrooms, onions, olive oil, garlic, salt, pepper and red pepper flakes. Mix to coat mushrooms and onions in oil and spices.

  • Create a hole in the middle of the pan by pushing mushrooms to the sides. Lay Boursin cheese in the middle then surround it with mushrooms.

  • Bake uncovered at 375 degree for 45-50 minutes until onions and mushrooms are tender.

  • Remove from oven and gently stir mushrooms in to cheese to combine.
