Simply Extra

This Sausage, Bacon & Cheddar Quiche is simple to make, full of meat, cheese and spiced up eggs to create a delicious breakfast sure to please. It is perfect for weekends or holidays with your family, to meal prep breakfast for the week or for a special brunch to feed a crowd.

Any time my family is together, whether it be a weekend or holiday, Quiche or Breakfast Casserole will be served one morning. Both are delicious one pan breakfasts that can be prepped ahead of time and simply put in to the oven to cook in the morning. This Sausage, Bacon & Cheddar Quiche has become one of our favorites and renamed "Meat Pie" by the men in our family. "Meat pie" is exactly what it is with some added cheese, eggs and spices and prepared in a flaky, buttery pie crust for the most mouthwatering breakfast. Make it up the night before and refrigerate before baking the next morning, or make it up to a month in advance and freeze.
Variations: Quiche is a meal you can easily change up based on what you have on hand or what your preferences are. You can use hot or mild sausage depending on the spice level you want. Add in some hot sauce for extra spice, we love McClards Pepper Sauce from a local BBQ restaurant. You can buy it on their website or use your favorite. Swap out chopped ham instead of sausage, add in green onions, bell peppers or tomatoes. Switch cheddar cheese for mozzarella, gruyere or pepper jack.
To make ahead: To make Sausage, Bacon & Cheddar Quiche ahead of time you can freeze the uncooked quiche by sliding it in to a resealable bag or wrapping it tightly in foil. When ready to bake and serve, remove from freezer the day before and allow to thaw then bake as directed. Keep in mind baking a cold quiche will take longer to cook. Another option is to cook your quiche before freezing. Cook as directed, allow to cool completely. Slide in to an airtight freezer bag or wrap tightly in foil. When ready to bake remove from freezer and allow to thaw. Bake covered in a 350 degree oven and cook 20-30 min until heated through. Tip: spray foil with oil before covering to prevent cheese from sticking.
