Last summer my husband went on a fishing trip off the coast of Louisiana and brought back lots of fresh Tuna. I was so excited for fresh fish, but then it hit me. I had no idea how to prepare fresh Tuna. This tuna was the best of the best and deserved to be cooked properly. I had several failed attempts of searing and cooking too much. I finally perfected my sear and Sesame Crusted Ahi Tuna is one of our favorites. Next, I wanted to make sushi out of it but the thought of rolling my own sushi is a little intimidating. So I did the next best thing, I made a Spicy Tuna Sushi Bowl. All the delicious, fresh flavors of a Spicy Tuna Roll in a deconstructed form. It's actually way better in my opinion.

If you don't have a freezer full of tuna like I currently do, you can also find fresh sushi grade tuna at the meat counter in most grocery stores. Or at a fresh seafood market if you're fortunate enough to live close to one. This recipe has instructions for cooking rice on the stove but you can also cook it in your instant pot. That's usually what I do and it comes out perfect every time. Combine a 1:1 ratio of rice to water, add in butter and pressure cook on high for 20-22 minutes. Let pressure release naturally for 10 minutes before releasing pressure. Remove lid and stir in additional ingredients. This marinade is very easy with simple ingredients and it also makes delicious tuna tacos topped with a mango or pineapple slaw.

Spicy Tuna Sushi Bowl
Serves 2
Ingredients:
Rice:
1 cup brown rice
1 3/4 cup water
1/4 Tbsp butter
2 Tbsp rice vinegar
1 Tbsp fresh lime juice
1/2tsp salt
Tuna:
1 lb sushi grade tuna, cut in to cubes
4 Tbsp soy sauce
1 Tbsp lime juice
1 Tbsp rice vinegar
2 tsp sesame oil
1 tsp Sriracha
2 green onions, sliced
1 Tbsp toasted sesame seeds
Toppings:
Mango
Purple Cabbage
Carrots
Avocado
Cucumber
Jalapeno
Toasted Sesame Seeds
Green Onions
Soy Sauce
Sriracha
Lime wedges
Directions:
Cook the Rice:
In a small pan add rice, water and butter. Bring to a boil. Cover and reduce heat to low. Cook for 45 minutes.
Remove from heat and keep covered. Let sit for 10 minutes.
Remove lid and add vinegar, salt and lime juice. Use a fork to fluff and combine.
Marinate Tuna:
While the rice is cooking, combine marinade ingredients, including green onions and sesame seeds, in a medium size bowl. Stir in tuna to coat well. Let sit while rice finishes.
Making the bowl:
In the bottom of a bowl add 1 cup cooked rice. Top with tuna and toppings of your choice.
